Introduction

Ingredients

    Quinoa, feta cheese, chicken broth, artichoke hearts, grape tomatoes and green olives (stuffed)

Directions

Cook quinoa in chicken broth until fully cooked. Add chopped olives, tomatoes, artichoke hearts and feta.
Eat hot or chill (i prefer it cold)....it's good either way.

    I am using Kalamata Olives, Red Peppers, Artichoke, Fresh Basil and some Green Onions for my version of this Mediterranean Classic. I love using Quinoa. Thanks for your salad inspiration! - 5/10/10

    Very Good
    I added spinach and peppers and omitted the olives due to personal tastes. It was a fabulous, satisfying lunch. I'll definitely make this again. - 6/13/09
