Number of Servings: 8

Ingredients

    - 2 lbs beef stew meat, cut into 1/2 inch pieces
    - 4 large potatoes, peeled and diced
    - 20 baby carrots, halved
    - 1 cup white mushrooms, cleaned and halved.
    - 1 cup onion, chopped
    - 4 cups beef broth
    - 1 bay leaf
    - 2 tbsp worcestershire
    - salt and pepper to taste

    - 1 cup frozen baby peas, thawed and drained
    - 1/4 cup corn starch, dissolved in 1/4 cup water

Directions

In a large crock pot, combine all ingredients except peas, corn starch and water. Stir to combine well, cover, and cook on LOW for 10 hours. At the end of the cooking cycle, add the peas to the crock pot, then combine corn starch in water and pour into stew. Stir to combine, turn the crock pot on HIGH and cook until thickened, 5-10 minutes.
