Number of Servings: 8



    Ginger Root, 6 tsp
    Garlic, 5 clove
    Onions, raw, .5 medium, chopped
    Sweet potato, 1, cubed
    *Idaho Potato, 1 medium, cubed
    Carrots, raw, 2 cup, chopped
    Chicken stock, home-prepared, 6 cup
    red lentils, 1 cup


1. Chop up onion and grate ginger and garlic together.

2. In a large saucepan, heat the onion, ginger, and garlic in the canola oil (salt slightly to get everything to 'sweat') over low-to-medium heat until onion goes translucent. Make sure not to brown.

3. Add in the chicken stock along with red lentils, chopped carrot, and cubed potato and sweet potato. Bring to a slow boil and leave it alone for about 25 minutes, until everything's on the verge of being too mushy. Take off the heat.

4. In batches, CAREFULLY blenderise the soup until it's a uniform, beautiful orange colour.

5. Eat and enjoy!
