Ingredients

    1-1/2 C RICE
    1/2 C CHOPPED ONION
    1 GARLIC CLOVE MINCED
    2TBSP OLIVE OIL
    2 -3/4 C CHICKEN BROTH HEATED
    1/3 C PICANTE SAUCE
    1 SMALL CARROT PEELED AND DICED

Directions

In a large saucepan over low heat cook rice, onion and garlic in oil until rice is lightly browned. Stir frequently. Stir in Hot Chicken Broth, picante sauce and carrot. Cover and simmer until all liquid is absorbed about 20 minutes.
