Introduction

This is a great main dish for dinner with stewed tomatoes substituting for the tomato sauce. I usually serve it with a big salad. You can substitute Italian cheese blend for Mexican cheese if you'd like. This is a great main dish for dinner with stewed tomatoes substituting for the tomato sauce. Ingredients

    1 large green bell pepper, chopped
    1 large red bell pepper, chopped
    1 cup onion, chopped (I use red)
    2 cloves garlic, minced
    1 can stewed tomatoes, Italian style
    1 thin boboli pizza crust
    Tony Chachere's to taste
    **You can use any veggies you like in addition to this. Sometimes I use mushrooms or whatever is around the house!

Directions

Chop all the veggies (except tomatoes) and put them in a bowl. Spray with cooking oil and coat in Tony Chachere's. Heat a skillet over medium high heat and saute veggies until just tender. Add the stewed tomatoes and continue to saute until they are mushy. Spread the veggies evenly on a lightly oiled thin pizza crust. Top with the 2 cups cheese. Bake for 12-17 minutes until cheese is melted and slightly brown.
