A spicy, tart & sweet fruit salad that is easy to prepare and delicious! A spicy, tart & sweet fruit salad that is easy to prepare and delicious!
Number of Servings: 4


    1/4 c orange juice
    Juice of a lime
    Zest from a lime
    1 1/2 t dried mint
    2 T chopped cilantro
    1 jalapeno, seeded and minced
    1 T minced fresh ginger

    1 papaya, seeded and cubed
    1 banana, sliced
    2 kiwi, peeled and chopped
    1 pint strawberries, quartered

    4 oz. smoked salmon
    2 c salad greens


Mix dressing ingredients in a large bowl. Add the chopped fruit, toss and refrigerate at least two hours. Refrigerating overnight is better, it allows the flavors to meld.

To serve, place salad greens on a plate. Top with a serving of the fruit salad (1 3/4 cup). Add the smoked salmon. (I use the Chicken of the Sea smoked salmon in a vacuum-sealed pouch.) Delicious and healthy!
