A great way to use up a touch of the leftover 'nog from the holidays. A great way to use up a touch of the leftover 'nog from the holidays.
Number of Servings: 12


    1 cup flour
    1 cup spelt flour
    1/2 cup sugar
    1 tsp pumpkin pie spice
    1 tbsp baking powder
    1 1/4 cups eggnog
    1/3 cup oil
    1 egg
    1 tsp vanilla
    1/4 cup dried cranberries


Preheat oven to 400F. Line 12 muffin cups with liners, or grease.
Combine flours, sugar, pie spice and baking powder. Set aside.
Combine wet ingredients in a large bowl.
Add dry ingredients and mix until just moistened. Fold in cranberries.
Bake 15 minutes or until tests done.
Remove immediately to wire racks and cool completely.
