Ingredients

    4 large potatoes, peeled and cubed
    1 onion diced
    3 cups water
    1 lb cooked chicken breast, cubed
    1 lb velveeta cheese
    2 chicken bouillon cubes
    1/4 c green chiles


Directions

Peel and dice potatoes and onions. Saute in pan until lightly browned. Add water, bouillon cubes and chicken and cook until potatoes are done. Add velveeta cheese and green chile, stirring frequently until cheese is completely melted. Makes 8 servings.
