A great cold weather meal...very filling and Tasty! A great cold weather meal...very filling and Tasty!

    Cornmeal, chicken broth
    string beans, grape tomatoes
    garlic, red onions, olive oil,
    chickpeas, basil, red pepper flakes.


If using fresh chickpeas - use 3/4 cup to make 1.5 cup cooked chickpeas. canned can be used as is.
heat olive oil in pan - add garlic and red onion. saute for 2 min, then add grape tomatoes (cut in half lengthwise), steamed green beans and chickpeas. season with basil and red pepper flakes. make polenta by boiling chicken broth and adding cornmeal while stirring. stir constantly over low heat until cooked. add more water if necessary. serve vegetable mixture over polenta - top with a sprinkle of parmesan cheese.
