    4 (6oz) Tilapia Filets
    1/4 tsp salt
    1/4 tsp pepper
    Cooking Spray
    1 cup cherry tomatoes
    3/4 pitted green olives coarsely chopped
    3 tbsp parsley
    3 minced garlic cloves


Preheat oven to 375 degrees
Sprinkle fish with salt and pepper. Arrange fish in a single layers in a jelly-roll pan lightly coated with cooking spray. Combine Tomatoes and remaining ingredients : toss gently. arrange tomato mixture around fish
Bake at 375 for 20 minutes or until fish flakes easily when tested with a fork or until desired degree of doneness. Serve with 1/4 cup tomato mixture on top of fish.

    I was looking for fish recipes and this one seems like a great one. No creamy sauces in it just simple with the tomatoes and other ingredients mentioned in the recipe. I shall try it over the weekend. - 1/6/09
