    cooking spray
    500g chicken breast, skinless + diced
    1t crushed garlic, from jar
    1 cup/large onions, sliced
    1 cup capsicum, sliced (looks and tastes best if you have some red and some green)
    2t cumin
    2t paprika
    2t oregano
    1/2 - 2t chilli powder (add to your liking)
    2t salt reduced chicken stock powder
    1x415g can no salt chopped tomatoes
    1x450g can refried beans
    1x440g can kidney beans


In large saucepan coated with cooking spray saute chicken and garlic for 4 mins, add onion and capsicum and cook for 2 mins. Add cumin, paprika, oregano, chillip powder and stock powder and cook for 1 minute, until aroma releases. Add tomatoes, refried beans and kidney beans and combine well.
Bring to boil then simmer for a minute.

Serve with LOW FAT sour cream and tortillas baked in oven til a bit crisp!
*** Looks great served in a tortilla basket - make by spraying cooking spray over dessert bowl, press large tortilla into bowl, coat with spray again and bake in oven at 180 for about 10 mins , til slightly hardening.
