Healthy, oil free, sweetened with honey - this banana bread tastes great and is good for you! Add raisins, other nuts, spices like cinnamon or nutmeg, or 1/4 cup of shredded carrot for a new twist. Ingredients

    1/3 cup unsweetened apple sauce
    1/2 cup honey
    1 teaspoon vanilla extract
    2 eggs
    1.5 cup mashed bananas
    1 3/4 cups whole wheat flour
    1/2 teaspoon salt
    1 teaspoon baking soda
    1/4 cup hot water
    1/2 cup chopped walnuts

Directions

Preheat oven to 325 degrees F (165 degrees C).
In a large bowl, beat apple sauce and honey together. Add eggs, and mix well. Stir in bananas and vanilla. Stir in flour and salt. Add baking soda to hot water, stir to mix, and then add to batter. Blend in chopped nuts. Spread batter into a greased 9x5 inch loaf pan.
Bake for 50 to 60 minutes, until toothpick comes out clean. Cool on wire rack for 1/2 hour before slicing.

    I can't ever leave a recipe alone! I added 1/4 cup unprocessed oat bran in place of 1/4 cup of the whole wheat flour to give it more fiber. I omitted the walnuts because I am allergic. I switched the quantities for the honey and applesauce. Added 1 tsp cinnamon and pinch of nutmeg. It was very good - 1/18/09
