Introduction

Number of Servings: 1

Ingredients

    1 4 oz. Chicken Breast (no skin)
    1/2 clove garlic
    1/8 C. marinara sauce
    1/8 C. reduced fat mozzarella cheese
    1/2 tsp italian seasoning

Directions

Spray the center of a piece of foil with non-stick cooking spray. Place chicken breast in the center. Spread garlic and italian seasoning on both sides of chicken breast. Add 1/8 C marinara sauce and 1/8 C reduced fat mozzarella to the top of each chicken breast. Raise up the long sides of foil and fold down twice, do the same thing to the sides of the foil creating an air tight seal. Transfer packets to a baking sheet.
Bake for 30 to 35 minutes or until chicken is 170 degrees. Remove chicken from oven and let set a few minutes before poking a hole in the foil to release the steam before opening

Serve with pasta (not included in calorie calculations)

    Very Good
    Very tasty. I already had cooked Italian Chicken in fridge. I Saute the Garlic in cooking olive oil spray. Blended Marinara, italian seasoning and saute garlic together and heated in microwave. Heated up chicken at 275 in toaster oven for 6-10 min. Last 5 minutes added mozzarella until melted. YUM! - 3/22/12

    Nice adaptation of chicken parm., however, I used thawed frozen chicken breasts and there was a lot of water collected in my packet which made most of the sauce disappear. - 2/2/11
