    23/4 c sliced bananas
    1/3 c canola oil
    1/2 c rice syrup
    1 c whole wheat pastry flour
    1 c unbleached white flour
    1/2 t salt
    1 t baking powder
    1 t baking soda
    1/2 t allspice
    pinch ground cardamom
    2/3 c roasted walnuts


Preheat oven to 375F. Oil a 9" x 5" loaf pan.

In a blender or food processor, blend together the bananas and oil until just combined. Place the banana mixture in a large bowl. Stir in the syrup with a spatula. In a medium-sized bowl, mix together all of the dry ingredients, except the walnuts. Add the dry mixture to the banana mixture and mix together until well blended. Mix in the walnuts.

Pour the batter into the pan and bake for 40-50 minutes, or until a tester inserted int he center comes out clean.

Let cool for 20 minutes on a wire rack. Serve.
