    2 1/2 cups grated zucchini
    1/4 cup egg beaters
    2 tablespoons Smart Balance margarine, melted
    1 cup bread crumbs
    1/4 cup minced onion
    1 teaspoon Old Bay Seasoning TM
    1/4 cup all-purpose flour


1. Preheat oven to 400 degrees.
2. In a large bowl, combine zucchini, egg, and butter or margarine. Stir in seasoned crumbs, minced onion, and seasoning. Mix well.
3. Shape mixture into patties. Dredge in flour.
4. Spray cookie sheet with light layer of cooking spray. Place patties on cookie sheet and place in oven.
5. Bake for 12-15 minutes, then flip patties and bake an additional 12-15 minutes.
