    Chicken Burrito with Ranchero Sauce

    Ranchero Sauce
    1 tsp. olive oil
    1 red bell pepper, sliced
    1 med. onion, chopped
    1 garlic clove
    1 tsp. Jalapeno, minced
    1/4 cup celery
    1/4 cup diced tomatoes
    1 tsp. thyme, dried
    1 tsp. oregano, dried
    1bay leaf
    pinch red pepper flakes
    3/4 cup Chicken broth

    2 WW tortillas
    2 grilled chicken breasts, cooked diced
    1 cup cooked brown rice
    1/4 cup frozen corn
    2 oz reduced-fat cheese
    1 Tbsp. cilantro, chopped


Make Ranchero Sauce. Heat oil and saute vegetables and herbs and spices 2 minutes. Add broth and tomatoes. Cook 3 minutes. Set aside. Divide mixture into halves.
Add chicken, corn and rice to 1/2 reserved mixture.
Heat tortillas in microwave 30 seconds. Fill with chicken vegetable mixture and fold to seal. Top with cheese and cilantro and serve with additional reserved sauce on the side.
