Baja shrimp tacos are fresh and tasty. Low fat and high fiber. Baja shrimp tacos are fresh and tasty. Low fat and high fiber.

    1/2 cup light sour cream
    1 chipotle pepper, chopped fine (can with no adobo sauce) to taste
    1/2 lime, juiced

    2 tsp. olive oil
    8 oz shrimp, raw cut into small pieces
    1/2 tsp. grill mix
    1/2 lime juice
    4 corn tortillas
    1 tomato chopped
    1/2 onion, chopped
    1 cup cabbage, shredded
    1 lime—1 cut in wedges


Combine sour cream, minced chipotle and 1/2 a lime juiced. Set aside
Heat oil. Add shrimp and stir fry quickly. 1-2 minutes. Add grill mix 1/2 lime juiced.
Warm the tortillas in microwave 30 seconds.
To serve place shrimp in tortilla, add cabbage, tomatoes, onion and drizzle chipotle sour cream mixture Serve with lime wedges

Serve with rice and a salad.
