Home made blueberry muffins that pop out of the pan and taste fantastic. Home made blueberry muffins that pop out of the pan and taste fantastic.
Number of Servings: 12


    2 cups flour
    1 cup wheat germ
    2 tsp baking soda
    2 tsp baking powder
    1/2 tsp salt

    2 cups milk (or soy milk)
    1/3 cup honey
    1/2 cup applesauce

    3/4 cup blueberries (or whatever berries you like - even bananas, get creative)


Mix dry ingredients together
Mix honey, milk, and applesauce together in seperate bowl.
Add to dry mixture, mixing just enough to moisten the flour.
Add berries.
For vegan diets you can use soymilk or even sour soymilk or yogurt for a "buttermilk" taste.
drop by tablespoon into 12 large muffin cups
Bake for 17-19 minutes, or until they brown on top and smell just right.
