Number of Servings: 12


    2 cups flour
    1 teaspoon salt
    1 teaspoon baking soda
    1 cups sugar
    teaspoon nutmeg
    teaspoon ginger
    1/3 teaspoon cinnamon
    cup cream
    1/3 cup vegetable oil
    3 eggs
    2 teaspoons vanilla
    3 cups apples (see below)
    1 cup chopped walnuts

    1 tablespoon melted butter
    teaspoon cinnamon
    teaspoon nutmeg
    tablespoon lemon juice
    1/8 cup brown sugar
    Peel, core and slice apples into inch slices, mix with butter, cinnamon, nutmeg, lemon juice and brown sugar. Set aside.

Preheat oven to 350
Mix flour, salt, baking soda, and sugar, and spices together. Set aside.
In a separate bowl, mix cream, oil, eggs and vanilla.
With a fork, beat rapidly for 1 minute.
Add egg mixture to dry mixture, stirring until moistened.
Reserving cup apple mixture, add apple mixture and walnuts.
Do not overstir.
Grease 9x13 pan. Spread mixture into pan evenly.
Arrange remaining cup of apple mixture over the top of the cake.
Bake at 350 for 45 minutes, or until toothpick comes out cleanly.
Cool on wire rack.
Glaze cake (see below).
Serve warm.

Directions for Glaze:
In a small saucepan, combine brown sugar, butter and milk. Over medium heat, bring to a boil, stirring constantly.
Allow to boil for 1 minute.
Remove from heat and pour over warm cake.
