Number of Servings: 1


    1/2 c chopped spinach (canned/frozen/wilted fresh) drained or squeezed dry.
    4 large egg whites
    Garlic salt to taste
    Pepper to taste
    1 oz fat-free cream cheese
    1 plum tomato, diced
    1 Tbsp chives (fresh or dried)


Preheat non-stick skillet on med-high heat.
Mix spinach and egg whites together.
Pour mixture into skillet.
Sprinkle with garlic salt and pepper
(Dice tomato and chives while omelet is cooking.)
When set, carefully flip to cook other side.
Heat cream cheese for 10 sec to soften.
When both sides of omelet are done to your liking, remove omelet from heat
Spread softened cream cheese on one side
Place diced tomatoes and chives on top of cream cheese.
Sprinkle with garlic salt and pepper to taste.
Fold in center and plate.
**You could use any low-fat shredded cheese in the place of cream cheese, I just didn't have any on hand**
