Introduction

A family favorite that probably has too many calories. We will see when I calculate it. You can't stay away from ALL high calorie foods ALL the time, now can we...but eating only one of these cookies won't break the calorie bank, if you plan it in for the day :) A family favorite that probably has too many calories. Ingredients

    1 stick unsalted butter
    2 cups sugar
    1/3 cup cocoa
    1/3 cup non fat milk
    dash of salt

    1/2 cup peanut butter
    1 tsp vanilla extract
    5 cups quick cook oats

Directions

Get oats, peanut butter, and vanilla ready and handy by the stove. Have a sheet of wax paper ready on counter and pot holder by the sheet of wax paper.

Put the first five ingredients in a large sauce pan. Bring to rolling boil(a boil where when you keep stirring it keeps bubbling lots) over high heat stirring constantly. When it reaches a rolling boil, boil for 1 minute exactly. Remove from heat and add Peanut Butter and Vanilla stir until melted in. Add the oats stir until combined completely.

Move your pan to you pot holder and working quickly place small spoonfuls onto your wax paper..trying to make 30 cookies if you want the calories to be correct for one serving. You can use 2 spoons, one to push the cookie off of the other spoon. Cool completely, if you can wait that long, and enjoy...remember moderation in everything is the key with this one. IF you can't stand eating just one or two, then plan to take the rest to your neighbor or freeze them (if you can stay out of the freezer).
