Ingredients

    1 cup oats
    1 cup milk (1%)
    1 cup whole wheat flour
    1/2 cup brown sugar lightly packed
    1/2 cup plain no fat yogurt
    1 tsp vanilla extract
    2 egg whites
    1 tsp. baking powder
    1/2 tsp. salt
    1/2 tsp. baking soda
    1 tsp. cinnamon
    1 tsp. vanilla
    1 tsp. sugar
    raisins or nuts can be added but will increase your calorie count

INSTRUCTIONS

PreHeat Oven to 400 degrees


1. In the first bowl, stir together and soak the oats in the milk, yogurt, eggs whites, and vanilla extract while you prepare the dry ingredients.

2. In a second bowl measure and whisk together the dry ingredients.

3. Add the wet ingredients to the dry ingredients and mix until just combined. Add nuts and raisins if desired, but be sure to add these items to your calorie count.

4. Spray a 12 yield muffin pan with cooking spray and spoon the mixture into each muffin cup.

5. Bake for 20 to 25 minutes or until done. Let the muffins rest for 5 minutes before removing from the pan. Enjoy warm or wait until they cool.

6. These muffins can be frozen and reheated in the microwave for a quick breakfast or snack.
