    4oz 93% lean ground turkey
    2 cup frsh broccoli
    1/2 packet fresh spinach
    10 fresh onion rings
    1 tsp olive oil
    3 egg white
    2 slice reduced-calorie whole wheat bread
    1/2 cup tomato sauce
    1/4 fresh lemon juice
    1/2 tsp nutmeg
    1 tsp cayenne pepper
    1 tsp salt
    1/2 tbsp black pepper
    1 tbsp permesan cheese, shredded


Steam/boil broccoli and spinch respectively,drain off the water and squeeze a bit of lemon juice
Stir fry the onion rings with olive oil
Preheat the oven to 350`F, spray a baking pan with non-stick cooking spray
Put the bread in a food processor to produce bread crumbs
In a large bowl, mix ground turkey, bread crumbs,salt and spices.Add in egg whites,mix well
Put the small vegetable pieces into the mixture, pour in tomato sauce and lemon juice.
Pour the mixture into the baking dish, top with the onion rings and permesan cheese.(add extra ketchup if desired)
Bake for 45min and enjoy

  • This tastes excellent. I didn't have cayenne, so I used crushed red pepper, and I substituted the bread pieces with 1/2 the normal serving size of stuffing bread crumbs. I also used diluted tomato paste equaling 1/2 cup rather than ketchup. - 1/19/09
