Introduction

This is an excellent substitute for Mashed Potatoes This is an excellent substitute for Mashed Potatoes
Number of Servings: 2

Ingredients

    1 medium sized head of cauliflower very roughly chopped
    6 cloves roasted garlic
    2 wedges Garlic and Herb Laughing Cow Cheese (any flavor would work)
    Salt and pepper to taste

Directions

cut the top off the clove of garlic and wrap in tin foil. Put in 400 degree over for 35-45 minutes (this is the majority of the cooking time)

Put a pot of water on to boil
Boil Cauliflower for 20 minutes or until fork tender

Remove 6 cloves of the roasted garlic (about 2-3 tbsp) reserve the rest in the fridge for later use

Put everything in a food processor and pulse until the desired consistency

It shouldn't need too much salt and pepper
