Ingredients

    * Chicken Breast, no skin, 4 breast, bone and skin removed
    * Pepper, black, 1 tbsp
    * Wild Rice, 8 cup
    * Reduced Fat Peanut Butter, 8 tbsp
    * Beef stock, home-prepared, 1 cup
    *8th Continent Light Vanilla Soy Milk, 12 oz
    *Lemon Juice, 2 fl oz
    * Progresso Bread Crumbs - Italian Style, 0.25 cup
    *Curry Paste, 3 tbsp

Directions

Start boiling the wild rice. Put soy milk, beef stock, peanut butter, curry paste, & 1/2 of lemon juice in a separate sauce pan. Cover & simmer on low heat for about 15 minutes. In the meantime, cut the chicken breasts into 1x2inch strips & put in a frying pan with a little olive oil, the breadcrumbs, and the other half of the lemon juice. Cook chicken for about 10 minutes (or until fully cooked). Put about one cup of rice on each plate, then chicken over the rice, then about .75 cup of the peanut sauce over the chicken and rice.

Makes about 8 x 1cup rice + .75 cup Peanut sauce servings.
