    2 cups prepared bulgur
    1 cup chopped beets
    1/3 cup chopped parsley
    1/3 cup chopped mint
    3 tbsp lemon juice
    2 tbsp olive oil
    salt and pepper to taste
    1/4 cup feta cheese


Prepare bulgur according to package directions. Add, beets, parsley and mint. For the vinaigrette, mix lemon juice, honey, salt and pepper to taste, olive oil. Mix well - pour over bulgur mixture. Toss to coat. Top with feta cheese.
