    4 ounces Chicken Breast - Cooked and cut up
    4 ounces Shredded Mozzarella Cheese, part skim milk
    2 Tbsp Low fat cream cheese
    3 Bell Peppers
    0.5 Cup chopped onion
    1 Medium Zucchini, chopped
    Garlic, 3 cloves
    salt and pepper
    Italian seasoning


1. Saute garlic, onion, and zucchini
2. Prepare peppers to stuff, remove tops and clean out
3. Combine all other ingredients and the sauteed veggies in food processor and process until smooth
4. Thin with skim milk if necessary
5. Fill pepper shells then bake at 350 degrees for 30-45 minutes
6. Let rest 15 minutes before serving.

  • This is an EXCELLENT twist on traditional stuffed peppers. You could leave it chuckier if you like, but as the recipe reads, the filling comes out like the grittiness insides of a chicken Croquett. I loved it that way. Great to make in advance and freeze. Use different types of peppers too!!! - 1/20/09
