Ingredients

    1 tablespoon extra virgin olive oil
    1 onion, diced
    2 garlic cloves, minced
    1 large carrot, diced
    1 celery stalk, diced
    1 teaspoon dried thyme
    1/4 teaspoon dried marjoram
    1/4 teaspoon pepper
    salt
    4 cups vegetable stock
    2 cups water
    1 cup brown lentils or green lentils
    1/4 cup barley
    1/4 cup fresh parsley, chopped
    1/4 cup non-fat, plain yogurt (optional)
    1 tablespoon fresh parsley, diced (optional garnish)

Directions

Heat oil over medium heat in a large pot. Saute onion, garlic, thyme, carrot, celery, marjoram and pepper until inions are soft, about 5 minutes.

Add stock, water, lentils, and barley and bring to a biol. Reduce heat, cover, and simmer until barley and lentils are tender, approximately 40 minutes.

Stir in chopped parsley, if desired.

May top each serving with a dollop of yogurt. Sprinkle with finely diced parsley.
