Ingredients

    1 Green Pepper, chopped fine
    1 Red Pepper, chopped fine
    1/2-1 Red Onion, chopped fine
    1 tsp. Cilantro, chopped fine
    1 can Pinto Beans, rinsed & drained
    1 can Shoepeg Corn, rinsed & drained
    1/4 cup Olive Oil
    1/3 cup Cider Vinegar
    1 tsp. Sugar

Directions

Chop veggies and add beans, corn, oil, vinegar & sugar. Refrigerate several hours or overnight. Enjoy! Can be used over seafood or chicken as well!
