This is another WW meal idea for single servings. (In case you have a significant other who doesn't like healthy food!) This is another WW meal idea for single servings. (In case you have a significant other who doesn't like healthy food!)

Ingredients

    1 tsp EVOO
    1/2 tsp Minced Garlic
    4 oz Boneless, Skinless Chicken Breast- cut into 1-inch pieces
    1 Pinch of Dried Thyme
    1 cup Frozen Broccoli Florets
    1/2 cup Chicken Broth
    1 cup Cooked Brown Rice

Directions

Serves 1.

Heat oil in a large skillet over medium-high heat. Add garlic; saute 1 minute one minute Season chicken with thyme, salt, and pepper (opt), add to skillet. Cook, stirring frequently until browned, about 3 minutes. Add broccoli; cook 1 minute. Add broth, cover and cook 5 minutes. Serve over rice.
