Ingredients

    3 pounds chicken breast
    10 cups water
    2 t. salt
    1/2 cup uncooked long grain rice
    1/2 c. chopped onion
    1/2 c. chopped carrots
    1/2 c. chopped celery
    1/2 c. sliced okra
    1 14.5 oz. can stewed tomatoes
    1 T. chopped green chilies
    1 garlic clove, minced
    1.5 t. chili powder
    1 t. salt
    .5 t. lemon-pepper seasoning
    .5 t. paprika
    .5 t. garlic powder
    pinch of cayenne pepper, thyme, ground cumin

Directions

Place chicken, water and salt in a soup kettle. Slowly bring to a boil, skim foam. Reduce heat, cover and simmer for 45-60 minutes or until chicken is tender. Remove chicken. Cool and chop into bite-size pieces. Skim fat from broth. Add rice, vegetables and seasonings. Cook, uncovered, over medium heat for 30 minutes. Add chicken. Simmer for 30 minutes or until vegetables are tender.
