Ingredients

1 T. olive oil
1/4 c. chopped yellow onion
2 cloves garlic
1 yellow bell pepper, coarsely chopped
2 15-oz. cans chopped tomatoes
1 15-oz. can tomato sauce
1/4 c. chopped sun-dried tomatoes
1 bunch scallions, chopped
1/2 c. chopped fresh Italian parsley
1/4 c. chopped fresh oregano
1/4 c. chopped fresh basil
2 8-oz. blocks light feta cheese, crumbled
1 lb. radiatorre
1 lb. large shrimp, peeled and deveined
salt and fresh ground pepper to taste
Directions
Makes about 10 servings.
Heat olive oil in a 4-1/2 qt. pot over medium heat. Cook onion, stirring, until softened. Add garlic and pepper and cook, stirring, for a few more minutes. Add tomatoes and tomato sauce and bring to a boil. Reduce heat and simmer for about 30 minutes. Stir in scallions, herbs, salt, pepper, and feta and keep warm.
When the sauce is almost ready, cook the pasta. Boil the shrimp until it just turns pink, drain, and stir into the sauce. Toss sauce with drained pasta and serve.
