Ingredients


    Pork Sausage, 6 link (raw dimensions: 4" long x 7/8
    Egg, fresh, 6 large
    Half and Half Cream, 2 tbsp
    Red Ripe Tomatoes, 1.5 medium whole (2-3/5" dia)
    Shallots, 1 tbsp chopped
    Green Peppers (bell peppers), 0.5 cup, chopped
    Cheddar Cheese, .5 cup, shredded
    Salt
    Pepper

Directions

Preheat oven to 350 degrees. Cut sausage into pieces and brown in non-stick 10 inch pan with shallots. Add peppers and sautee until soft. Add tomatoes and sautee until tomatoes just begin to soften. Whisk eggs with half and half and season to taste with salt and pepper. Pour over sausage and vegetables in pan and begin to lift sides as one would when cooking an omelet. When the frittatta begins to set, sprinkle top with cheese and put in the oven to bake for approximately 15 minutes. Remove from oven when nicely browned on top.
