    2 eggs, scrambled
    8 mushrooms, chopped
    1 clove garlic, chopped
    1/2 roma tomato, chopped
    1/3 avocado, chopped
    2 tbsp fat free sour cream


In a skillet, toast the garlic, add the mushrooms and saute until soft. Add the tomatoes and saute until soft. Add the scrambled eggs. Cook until done.

Top with avocado and sour cream. enjoy
