Ingredients

    14 oz pkg of Healthy Ones Smoked Sausage

    6 roma tomatoes, seeded and chopped into bite sized pieces

    1 small green bell pepper, seeded and chopped

    2 cloves of garlic, pressed

    1 tsp olive oil


Directions

Makes 4 - 1C servings


In a skillet on med-high heat add olive oil and green peppers. Saute until the peppers start to become tender. Add garlic, tomatoes and sausage and continue cooking until sausage is heated through, tomatoes have cooked down a bit and the liquid released from the tomatoes has reduced.


Serve alone or over brown rice.
