A yummy, moist, flavorful banana bread with a healthier twist. A yummy, moist, flavorful banana bread with a healthier twist.
Number of Servings: 8


    1 cup granulated sugar
    1/2 cup All-Whites, 100% liquid egg whites
    1/2 Tbs canola oil
    1 tsp baking soda
    2 tsp salt
    1 and 1/2 tsp pure vanilla extract
    2 cups all purpose flour
    4 large, very ripe bananas


Preheat oven to 325* F. Spray loaf pan with non-stick cooking spray and set aside.

Peel bananas and place on a large plate. Use a fork to mash the bananas thoroughly - until they look shiny and wet. Set aside. In a medium bowl, combine sugar, egg whites, applesauce, oil, baking soda, salt, and vanilla. Stir until well mixed. Add flour and carefully mix again until smooth. Add mashed bananas from plate and stir well.

Pour batter into loaf pan sprayed with non-stick cooking spray. Bake for 1 hour at 325* F, or until toothpick inserted in center comes out clean.

Makes 8, 3/4 inch slices (approximate measure).
