    Ground turkey,
    small onion, diced
    stalk of celery, diced
    green pepper, diced
    small zucchini, diced
    can of mushrooms, stems and pieces
    jar of salsa(you decide mild, med., or hot)
    6 low fat and or/low carb tortillas
    shredded low fat cheddar cheese, 1 c
    low fat cottage cheese, 1
    envelope of taco seasoning mix


Brown ground turkey and add onions, celery. green pepper, zucchini and mushrooms. Add envelope of taco seasoning and jar of salsa. Fry until all cooked. Make lasagna while meat mixture ishot.
Spray casserole dish with low fat pam cooking spray.

Bake at 350 degrees for half an hour. Freezes well and tastes good the next day.
