    4 boneless/skinless chicken thighs
    1/2 Tbsp extra virgin olive oil
    1 large zucchini, cubed
    1 C. Rachael Ray Chicken Stock
    1 can diced tomatoes, no salt added
    1 can garbanzo beans, drained & rinsed
    1 tsp cumin
    1/2 tsp cinnamon
    1/2 tsp cayene pepper


1. Heat 1/2 Tbsp extra virgin olive oil in sautee pan. Add chicken thighs and brown on each side (about 2-3 mins/side).

2. Add cubed zucchini and cook until lightly browned

3. Add the stock, tomatoes, garbanzo beans, and seasonings- bring to a boil and turn down and simmer until chicken is tender and cooked through (about 10-15 mins)
