    2 small onions, chopped
    1 green pepper, seeded and chopped
    3-16 oz. cans dark red kidney beans, drained
    3-16 oz. cans pinto beans, drained
    2-15 oz. cans stewed tomatoes with juice
    16 oz. tomato sauce
    1 cup V8 vegetable juice (regular or hot and spicey)

    2 tbsp. chili powder
    2 tsp ground cumin
    .5 tsp cayenne (all spices can be adjusted to taste)


Spray the bottom of a large dutch oven with cooking spray and sautee onion and green pepper til just soft and beginning to carmelize. Add all beans, stewed tomatoes, tomato sauce and V8 juice and mix well. Add spices, adjusting to taste, mix well and cover. Simmer on low for 30-45 minutes, stirring often. Makes 12 1-cup servings.

*This is a very forgiving recipe, you can change and add black beans, corn, jalapeno, etc. Diced tomatoes work well too.
