Ingredients

    1 10 oz. pkg. frozen spinach or 1 lb. fresh, cooked and drained
    3/4 c. Egg Beaters
    1/34 c. grated fresh Parmesan cheese
    1 clove garlic, minced
    1/4 c. chopped parsley
    1/2 c. bread crumbs

Directions

1. Cook spinach according to package directions. Drain well, squeeze, and chop.
2. Add rest of ingredients and blend well.
3. Drop by spoonfuls onto heavy skillet which has been sprayed with oil (Pam, etc).
4. Cook on both sides until golden. Serve warm.
