These zesty enchilada's are fabulous with fat free refried beans. Love em! These zesty enchilada's are fabulous with fat free refried beans. Love em!
Number of Servings: 4


    8 6-inch corn tortillas
    4oz low fat sour cream
    4 oz low fat cream cheese
    1/3 packet taco seasoning
    12 oz grilled chicken strips (diced)
    1 14 oz can enchilada sauce
    1.5 cups shredded mexican blend cheese (Kraft 2%)
    Salsa (I use homemade)


Preheat oven to 350. Mix sour cream, cream cheese, taco seasoning and 1/3 cup salsa.
Add chicken and 1 cup shredded cheese to mixture.
Pour some enchilada sauce in glass dish, coat enchiladas and fill with mixture. Sprinkle another 1/2 cup shredded cheese on top and bake @ 350 for 20-25 minutes. Makes 4 servings. Top with fresh tomatoes and cilantro.
