Introduction

A yummy almost gooey pasta dish that satisfies that "bad for you" pasta craving. The shredded zucchini adds color but virtually no flavor. My picky eater(absolutely no cooked veggies) doesn't complain this way. A yummy almost gooey pasta dish that satisfies that "bad for you" pasta craving. Number of Servings: 6

Ingredients

    One pound chicken without bone- I used chicken breast but thighs would be good too!
    Balsamic Vinegar- at least 4 tablespoons
    Cooking Sherry-about 2 Tablespoons
    12 oz whole wheat spaghetti-cooked according to package
    2 red peppers, seeds removed, chopped
    2 cups shredded zucchini
    Mrs. Dash garlic and herb- about 2 tsp
    half tsp black pepper
    half cup sour cream or yogurt (I had sour cream on hand)
    half cup Parmesan cheese (not needed but I HAD to have it)

Directions

Slice chicken into thin pieces, marinate in sherry and balsamic vinegar for 2 hours. Place chicken and marinade into large skillet, add veggies. Cook until chicken is no longer pink and peppers are tender. Add seasonings. Taste- add a little salt if necessary. Add pasta, sour cream and parmesan. Mix well. Let sit about 5 minutes to get that gooey thing going. Enjoy.
Makes 6 servings of one and a quarter cup each.
