    4 boneless, skinless chicken breast halves (4oz each)
    2 medium green bell peppers, cut into strips (about 2 cups)
    1 large red onion, cut into 1/4 inch wedges
    1/2 fresh jalapeno pepper, seeded and cut into thin strips
    2 tbsp fresh lime juice
    2 tbsp red wine vinegar
    1 tbsp olive oil
    2 medium tomatoes, cut into 8 wedges each
    2 tbsp chopped fresh cilantro


In a shallow glass dish, combine chicken, pepper strips, onion and jalapeno pepper. In a msall bowl, combine lime juice, vinegar and oil. Pour over chicken mixture, stir to coat. Cover dish with plastic wrap, refrigerate for 30 minutes.

Preheat the broiler, remove chicken and vegetables from marinade, place on broiler pan. Discard marinade. Broil 3 inches from heat for 5 minutes.

Using tongs, turn chicken and vegetables. Add tomatoes to pan. Broil until chicken is no longer pink in the center and veggies are charred, about 5 minutes.

Arrange vegetables on serving plates, top with chicken. Sprinkle with cilantro and serve.
