Ingredients

*1 12-oz. bag fresh or frozen cranberries (no need to thaw)
*1 Granny Smith apple, peeled, cored, and cut into eights
*1 large red pepper, cut into large chunks
*1/2 medium red onion, cut into large chunks
*3/4 cup sugar
*1/3 cup apple juice
*3 TBSP chopped fresh cilantro (or 1/3 TBSP dried cilantro
*2 TBSP chopped pickled jalapeno pepper (or 1 to 1&1/2 TBSP regular jalapeno pepper
*1 tsp grated lime zest
Directions
MAKES 4 CUPS. ONE SERVING IS 1/4 CUP.
Put cranberries, apple, red pepper and onion in food processor; pulse until chopped. Transfer to a large glass bowl. Stir in remaining ingredients until blended. Cover and refrigerate, or spoon into crocks or jars and refrigerate. This can be stored up to 2 weeks.
Serve with low-fat chips or crackers. You can also make your own chips.
