Ingredients

    3 1/2 cups flour
    2 1/2 cups sugar
    2 eggs
    1 egg, separated
    1 tsp baking powder
    1/2 tsp salt
    2 pinches saffron
    1 cup toasted almonds

Directions

makes 4 dozen cookies
oven 325.
Put flour on a clean surface, shape into a mound and make a well in the center. Add sugar, 2 eggs, egg yolk, baking powder, salt, safron, and 3 tbsp waster to well and beat with fingers or a fork. Continue beating incorporating flour until dough comes together (will be stiff). Add almonds and knead with hands until smooth 1-2 minutes. Quarter dough, roll into 11/2 x 10 inch logs and arrange on baking sheet 2 inches apart. Use remaing egg white and brush dough with some of it. Bake 45 minutes. Carefully cut logs in 1/2 inch thick cookies. Return cookies to baking sheet and arrange cut side up in single layer. Bake 20-25 minutes. Cool completely.
