This is a very yummy and EASY one-dish meal. This is a very yummy and EASY one-dish meal.
Number of Servings: 8


    Olive oil, 1 tbsp
    Onion, 1 medium, chopped
    Garlic, 3 cloves, chopped or diiced
    Chicken breast, cubed, 16 ounces
    Taco seasoning, 1/2 packet
    Ro-tel diced tomatoes and chiles, 10 oz
    Fire roasted diced tomatoes, 14.5 oz
    Yellow sweet corn, frozen, thawed, 10 oz
    Black beans, 2 x 16 oz can, drained
    Green chiles, chopped, 2 oz (1/2 can)


Makes ~ 8 1-cup servings

Dredge chicken breast in half of the taco seasoning. Reserve remainder of seasoning. Heat oil in large deep skillet on medium heat. Saute onion and garlic until tender, about 3 minutes. Add chicken cubes and brown on both sides. Do not over cook. Add tomatoes, corn, beans, chiles, and reserved taco seasoning to skillet. Simmer for 20 minutes or until chicken cooked through. Serve alone or with 2% cheese or low fat sour cream as desired. (Nutritional information does not include toppings.)
