Introduction

Basic soup with the addition of lentils. Basic soup with the addition of lentils.
Number of Servings: 8

Ingredients

    1 tbs olive oil
    6 carrots, diced
    1 onion, chopped
    1/2 bell pepper, diced
    1 stalk of celery
    6 potatoes, diced
    2 cups beef broth
    1 cup lentils, cooked
    Salt and pepper to taste.

Directions

Heat oil in Dutch oven or sauce pan over medium heat.
Saute the carrots, onion, pepper and celery for 5 minutes.
Add potatoes and broth.
Add water to cover vegetables.
Bring to a simmer and cook until the potatoes are done.
Add lentils and season to taste with salt and pepper.
