Introduction

I converted a regular muffin recipe to make it healthier. You can further reduce the calories and fat by omitting the pecans, substituting fat free sour cream, or using more applesauce and less butter. Ingredients

    1/4 c butter, softened
    1/2 c sugar
    1 egg
    1/2 c reduced-fat sour cream
    1/2 c unsweetened applesauce
    1 tsp vanilla extract
    1 1/2 c all purpose flour
    1.5 tsp baking powder
    1 c frozen thawed peaches or fresh peaches, chopped
    1 c pecans, chopped

Directions

Cream butter and sugar with mixer. Add egg, sour cream, vanilla and applesauce. Combine flour and baking powder in a separate bowl, then stir into the applesauce mixture just until moistened. Fold in peaches and pecans. Bake at 400 degrees for 20-25 minutes or until done. Makes 15 medium-sized muffins.
