From Cooking Light magazine, just added the almonds. From Cooking Light magazine, just added the almonds.
Number of Servings: 6


    1 pound fresh green beans, trimmed and cut
    1 tbsp oil
    .25 cup shallots, chopped
    1.5 tbsp minced fresh ginger
    .5 tsp crushed red pepper
    1 tbsp low sodium soy sauce
    dash salt


Boil beans for 2 min, ice them down. Med high heat in skillet, .5 tbsp oil. Stir-fry beans for 5 min until blistery. remove them, add shallots, garlic, ginger, red pepper; stir fry 15 seconds. Return green beans, add vinegar, soy sauce and salt, toss to combine. Add almonds, serve. Six 1/2 cup servings.
