Introduction

This is a super yummy alternative to sauteeing chicken and onions. By placing the chicken on top of the onion while it's baking, the juices from the chicken seep down into the onion, browning and seasoning it to perfection! Even my children don't realize what a healthly receipe this is! This is a super yummy alternative to sauteeing chicken and onions. Ingredients

    4 - 4 oz Chicken Breasts
    Half of a large onion
    1 tsp Herbs de Provence
    Salt to taste
    Pepper to taste
    Olive Oil Cooking spray

Directions

Pre-heat the oven to 375 degrees. LIGHTLY spray a cookie sheet with Olive Oil cooking spray. Take the half onion and slice it into 4 equal peices keeping the onion rings together. Place the 4 slices of onion flat down on the cookie sheet a couple of inches apart. Then season both sides of the chicken breasts with salt, pepper and Herbs de Provence. Place each seasoned chicken breast on top of the oinion slices. LIGHTLY spray the top of each chicken breast with the Olive Oil cooking spray. Bake at 375 degrees for about 40 minutes. Serve with your favorite steamed vegetables. Enjoy!! Makes 4 servings.
